Black pepper is a vine that bears small single seeded fruit that grows in long thin clusters, (imagine a string of miniature grapes). Peppercorns are made by blanching or cooking and drying the fruit. Our black peppercorns are the unripe fruit, blanched in hot water for 2 minutes and then dried in solar driers, whereas white peppercorns are the ripe fruit with the fruit skin removed.

Piperine, a major component of black pepper, blocks fat cell formation by interfering with the activity of the gene that controls the formation of new fat cells.
